Nutella and Salted Caramel Stuffed Double Chocolate Chip Cookies

I found a really interesting and yummy looking recipe from my favourite cooking community Sorted. They do all kinds of really easy but impressive recipes and most of them are demonstrated on their Youtube channel. I highly recommend checking out both, I know I’ll be trying many of their recipes and promise I’ll deliver you the results right here. This recipe was demonstrated on their channel but is not by them. The recipe is by Izy from Top With Cinnamon and it is amazing, I’m super glad that the boys had her show this. “Okay we get it, everyone’s awesome just get on with the recipe” Oh yeah right! Here we go.

The ingredients:

110g              butter
350 g             light brown sugar
55 g               cocoa powder
2                    eggs
1/4 tsp           salt
3/4 tsp           baking powder
260 g             flour
100g              milk or dark chocolate chips
8 tbsp            Nutella
16                  caramel-filled chocolates
                      sea salt for sprinkling

Get your oven preheated to 180°C and line a baking tray with parchment paper. Melt the butter in a saucepan over medium heat. Take off the heat and stir in the brown sugar and eggs. I was a little worried at this point because my butter got a little hot so in order to avoid scrambling the eggs I allowed the pan cool down a little after adding the sugar. Add in the cocoa, salt and baking powder and stir until smooth. Add the flour and mix just enough so there are no floury patches in your dough. Stir in your choice of chocolate chips, I used dark.

The assembly:

Place heap tablespoons of dough on your tray and using your fingers make a large indentation in the middle of each dough ball. Fill the indentation with about half a teaspoon of Nutella and top with a caramel-filled chocolate.

Top with a flattened tablespoon of dough. Remember to seal the edges really well. Sprinkle the top with a little bit of sea salt flakes and bake for 8 to 10 minutes.

I did a couple of versions in addition to the original: without the sea salt, without Nutella, but the ones done exactly by the book so to speak were the best in my opinion. Enjoy while they're still a little warm, the center will go solid once cooled down.

Oh the deliciousness..

Go check out the boys, go check out Izy, they're awesome I wouldn't lie to you, links provided. Thank you!
