Mixed Berry Pie

I'm a children's club leader at my church and we made this pie with the children. I had Mr Engineer taste some to give his opinion and he said that it was so good that I should make a post about it. So naturally I made one at home so I could get photos to include on the post. There are a few steps to actually making thispie, this isn't one of those one pot wonders but trust me when I tell you it is worth the trouble.

Mixed Berry Pie:


200 g            butter or baking margarine
2 dl               sugar
1                   egg
3 dl               flour
1 dl               potato starch
1 tsp             baking powder
2 dl               light cream, you can substitute for half and half that can be found in the U.S. at least or a mixture of milk and double cream

Cream together the butter and sugar. Add in the egg and keep mixing until fully combined. Mix together the dry ingredients and add to the mixture alternating with the cream. Mix until just combined. Spread on a baking sheet lined with baking parchment and bake in a 225 degree oven on the lowest rack for about 10 minutes. By then your dough will be half-baked and slightly risen.

My baking sheet was too big for the dough so I had to stuff some aluminium foil to the sides until the size was right.

Berry topping:

200 g            frozen blueberries
200 g            frozen raspberries
2 tbsp           water
3/4 dl            sugar
2 tbsp           potato starch

Have the berries slightly thawed. Mix all of the ingredients together in a saucepan and heat until just boiling. Keep mixing the whole time, this mixture will burn in a second. After the mixture has reached the boiling point you can either mash up some of the berries or keep them as they are. Pour over the half-baked dough.

Crumb topping:

50 g              cold butter or baking margarine
1/2 dl            sugar
1 dl               flour

Rub all of the ingredients together in a bowl. Sprinkle over the berry topping and put the whole thing back in the oven fo about 15 minutes. 

The crumb should get a light golden brown colour all over and the base dough will be fully cooked. After this, allow to cool completely and cut in to pieces.


2 dl               icing sugar
~1 tbsp         water

Mix the ingredients together and drizzle over the cooled and cut pie.
